INGREDIENTS:
• 4 Tbsp. Butter
• ¾ cup Onion, diced ¼ inch
• ½ cup, each Red and yellow bell pepper, cut in ¼ inch
• 1 each Jalapeno pepper, seeded and minced
• 2 tsp Minced garlic
• 4 cups Fresh corn kernels (about 3 ears)
• 1 tsp. Sugar
• ½ cup Heavy cream
• Cayenne pepper, to taste
• Salt and pepper, to taste
• ¼ cup Chopped parsley
PROCEDURE:
1. Heat a large sauté pan over medium heat. Add butter.
2. Sauté onion until translucent. Add bell peppers, jalapeno, garlic and corn. Saute for 2-3 minutes.
3. Add sugar and cream. Let simmer until cream is thickened. Season to taste with cayenne, salt and pepper.
